Is there anyway to set the default paper tray to my main tray? Seems when I print from my iPad Pro or iPhone to my Canon TR8520 it is defaulting to the rear (manual feed) tray. This is even when I am printing a recipe. Very frustrating to have to continually override to get to PLAIN PAPER.

Nothing that I am aware of. I reached out to Canon support and they advised this is how it works with Airprint. If Airprint thinks it is a photo it goes for the manual tray. If it thinks it is a doc then main. Would prefer the ability to set a default.
Air Print settings are very limited. Have you looked to see if Canon has an app that you can use? Sometimes using a third party app is better than using the ones that come with your iPad.
