when I have an email address in a Numbers spreadsheet, if I click on it an email is automatically started in Mail. How do I stop Numbers from recognizing email addresses and treated them as plain text?

You could remove the "email" - link:
Select the email-address, then Format>Remove Link like this:

Barry's answer is the best but I thought I would add that it is usually possible to click inside the cell without clicking the link. It is just tedious.
