Is there a program I can run that will recover erased files from my hard drive?

If you are using an SSD, then the files cannot be recovered due to the way SSDs work internally.
If you are using a hard drive, then you need to stop using the hard drive immediately since you may be overwriting what you are trying to recover. You will need to boot from another macOS drive and use a data recovery program such as Data Rescue.
You should seriously consider a professional data recovery service such as Drive Savers or Ontrack. Both vendors provide free estimates and are recommended by Apple and other OEMs.
You should also start regular system backups so you can more easily and cheaply access your files in case the files on your drive ever become inaccessible again.
