Do any of the 11 models require a specific International SIM card per country/continent or does it depend upon the wireless carrier? Is there a site where I can look at that data before deciding where to buy?

The SIM is carrier-specific, only international capabilities occur if your regular carrier has made arrangements with other countries, provided also that the frequencies used in the other country coincide with the capabilities of the specific iPhone submodel you have.
