I have an iPad that is connected to a really old email address which i have forgotten the password and have no way to access my emails anymore. I have tried to factory reset the iPad but it makes me use the login that it was last used logged into. Surely there is a way around this?

No, there isn't. You would need to recover the password, and hopefully you provided a rescue email that it can be sent to? Otherwise, you are going to have to contact Apple Security for assistance to recover your password. Contact Apple for help with Apple ID account security - Apple Support
