if I cancel my iCloud subscription will it remove all my documents?

If you down-grade to the free 5GB plan, eventually everything beyond 5GB will be purged from your iCloud account. So make sure anything important is transferred somewhere first and get your total iCloud storage use down to less than 5GB before you cancel.
