I'm trying to see if I get an Apple watch would it work for my iPhone XR straight talk

It will work with your phone as a GPS only watch. It will not work on StraightTalk's cellular network.

Apple Watch models with GPS are compatible with iPhone regardless of carrier. Apple Watch models with GPS and LTE are compatible with iPhone regardless of carrier, but if you want to use LTE on your Apple Watch, you can check carrier compatibility here: https://www.apple.com/watch/cellular/
