How do I permanently set the correct default country in Contacts? Each time I add a contact it defaults to the Netherlands instead of United States. Coincidentally, I've used the Netherlands as a VPN location, but this problem persists even when VPN is turned off.

Is your iPhone region set to the United States or Netherlands? If it's set to Netherlands, your contacts will automatically default to the same country.
To check the region on your iPhone, navigate to Settings > General > Language & Region.

Thanks for the swift reply, Joseph_S. My Region setting is now as always United States. The Contacts app apparently does not refer to this setting. Perhaps I've been unwittingly typing in a Dutch accent :(
