In the meanwhile, perhaps you could simply edit the title of the event to included "CANCELLED".

I would like to stress the importance of being able to stroke through events not calendars, In my case on an Outlook Calendar. Especially as we have entered a time of social distancing, it is important to have a record of what planned events needed to be cancelled, for future reference. Please figure out a way to give us this option!
