If you do not want to update your software or your macOS, you can revert from your backups:
Revert your Mac to a previous macOS version - Apple Support
With the release of macOS 10.15 Catalina, applications will have to be 64-bit. App developers will issue updated apps if they want their apps to work on this newest macOS upgrade

Reinstall Office. You cannot "undo" a macOS update or upgrade. You must first erase the drive, then install the version of macOS you want. Then you will lose everything.
Were your Office apps in the Applications folder where they are installed? Have you looked there? Or, did you install them in some other location? Have you tried searching for them with Spotlight?
If it's because you had a version of Microsoft Office prior to the 2016 version, you either have to do as Happy said or buy the newer version of Microsoft Office and install that instead.
I can no longer open Microsoft work and excel
