Can iPhone which is bought in Dubai and also activated in Dubai with a Du or Etisalat sim, can it work in India with an Indian sim??

Updating the phone will be no problem, but in this case, you will always get the iOS version, that has been made for devices, sold in Dubai. By connecting to Apple servers, the phone will download the intended iOS version automatically.
Will I get software updates if I am outside of the activated country like I am India but the phone was activated in Dubai.
