Try This Link: If your Mac Runs Slowly - Apple Support. Rid of any 32-bit apps that are installed. They are unusable in your operating system, and may be just eating up the CPU usage. Also, empty space on your hard drive, if its storage capacity is far too close to being full.
Use Force Quit:
If you are stuck, then escape out of what app you are currently running. Then "Force Quit" anything this is shown as "(Not Responding)". So, let's say Mail is not responding. What you would do is...
