iOS keeps reverting to basic keyboard and I'm out of ideas

I have an 8 on the latest iOS version. I have the Gboard and emoji keyboards installed as well as the native English iPhone keyboard. I've had this set up since before I got this phone. Recently, in any app I use, Gboard will pop up first and then there will be a flicker and the iOS keyboard will come up with the dictate key, etc. and another flicker and the old version of the iOS English keyboard will come up and that is what I have to type with. No swipe typing, no predictive text and no spell check is happening after this. Also none of the keyboard features, all are turned on, are working. It also does not auto capitalize, etc. It is like keyboard 1.0 now.

I have:

1. Uninstalled and reinstalled the latest version of Gboard
2. Tried deleting the English keyboard and only using Gboard and emojis
3. Reordering the keyboards
4. Resetting the phone

I don't know what to do anymore. Neither keyboard has all the functionality I'd like and I am going to lose my mind.
