How is the block list sorted? Like from bottom to top how are the numbers sorted, chronologically from the date that they were blocked or another way?

Yes, chronologically from when they were added to the list.

With the top being the oldest added and the bottom being the newest?
Yes.
Assuming you see this list at Settings > Phone > Blocked Contacts
