I have dual monitor (Acer H257HU 2560 x 1440 ) connected via thunderbolt 2. I am only getting 1080p on both monitor. what can I do to get them up to 2560 x 1440. thanks

That Apple DVI adapter is hard to find and will use up USB ports (or use phone chargers) for power.
Since the displays have HDMI you can use a simpler adapter from the Thunderbolt ports.
(The Mac mini's HDMI port can't handle over 1920x1080 at 60Hz)
To get 2560 x 1440@60 Hz you need to use Mini DisplayPort to Dual-Link DVI Adapters and Dual-link DVI cables.
