Locked vs unlocked phones

I purchased an unlocked phone and want to know if it will lock when I add a SIM card. Specifically, I am in the process of switching providers but do not want to wait until the switch occurs to start using my new phone. Can I use a SIM from my current provider for a week and then switch to the new one?

iPhone 11, iOS 13

If you purchased an unlocked iPhone from Apple then it doesn't matter when or how often you switch SIM cards from different providers. The iPhone will remain unlocked and you will be free to use it with whomever you choose and for however long you chose to do so. Remember, carrier unlocked iPhones are only sold by Apple directly.

Now, if you are in the US and bought your new iPhone from a service provider then it will remain locked to that provider until you suffice their prerequisites to get it unlocked.
