Is the Bluetooth button also greyed out? If so your phone has a hardware problem. If it is only Wi-Fi first try restarting your phone as described in this Apple support article—>Restart your iPhone - Apple Support


If the problem persists: Settings/General/Reset - Reset Network Settings.


If that doesn’t fix it most likely it is a hardware problem. Use the Contact Support link at the top of this screen to discuss repair options; they can also perform a remote diagnostic.
