Old Apple Id that apple doesn't recognize password needed

Have an old apple ipad. Setting up for granddaughter. It keeps asking me to enter the apple id password for and old email account id. I have no way of deleting this and putting in the new id.

Trouble resetting Apple ID password I can’t reset my elderly mother’s Apple ID password because she no longer has access to the associated email address. Is there another way to receive the link to reset the password? I don’t want to have to reset her phone and iPad to factory settings but not knowing the Apple ID password is causing lots of headaches.

See If you forgot your Apple ID password https://support.apple.com/en-us/HT201487 I am assuming the old email address is the Apple ID for the old iPad.
