I had already tried what was suggested based on some net searches and three attempts from the watch (post un and re pair) have failed. Hopefully fourth times a charm...thanks for the reply...it is possible there is just a congestion issue with server given how new it is and how many are home and looking for ways to stay busy (and connected).
Fingers crossed for next attempt.

Try updating from the watch itself;
Settings/general/software update.
Make sure watch is on the charger with at least 50% charge and turn bluetooth and wifi on.

Thanks for the advice. It has now worked after a few attempts via the watch itself. Best wishes and stay safe.
Same thing has been happening to me...went all the way through un pair then re paired as new watch, tried it from the watch itself and still it fails .....
I persevered by having the watch on it’s charger and then through the watch via settings:general:software update whilst leaving it on the charger all the time.
2nd attempt has now worked.
What troubles me now is: What has happened to the 6 or more times 400+ mb of download. Is it all now clogging up the memory in my phone?
After the update is finished the downloaded file is deleted from your phone,you can check here;
Watch app on the phone,go to general/usage and it will be listed here if it hasn't been removed.
