How do I change everything back to color?

Settings > Accessibility > Color Filters > turn it off
Open Settings ➔ Accessibility ➔ Display & Text Size ➔ Color Filters and make sure that the Color Filters is set to OFF.

I see I left out the Display & Text Size, so glad you followed up. It's what I get for multi-tasking and trying to answer questions at the same time.
Black and white screen, photos, everything in greyscale.
