YouTube video are not in hd quality and also pictures not good
On what iPhone model? With what iOS version?
YouTube is throttling their service because of the extra load cause by stay at home policies.

And also pictures on Facebook and Instagram are in low quality . Not visibly well
Networks are overcharged, yes.
What happens if you take a picture or a video recording, then open them from your camera roll?
If they look fine, your iPhone should be okay.
