Mojave Mail was "normal," but I could be crazy!

I upgraded my 2017 MBP 15" from High Sierra to Mojave not too long ago. Mail was "normal," but I could be crazy. Without gong into much detail, mail was normal in the sense that, for example, the Tool Bar showed the available fonts and their sizes; choices of bold, italic, underscore, color, etc.


I was used to the default font size being pretty small. And, of course, I could change the size if I wanted. Or at least this is the way I though things were after the upgrade, but I could be crazy. So one day I was going to change the font size and all the stuff I mentioned above was gone, but I could be crazy. And, I can't get it back.


I've used Macs since 1984, and I've never had anything happen to mail like this. What happened, and how do I fix it assuming I am not crazy of course. All help greatly appreciated!

Many option in Mail have been removed, column view user were especially hard hit.
