I'm new tp Logic Pro X version 10.4. Tracks loop by default. Continuous recording does not appear in the Help menu or in David Nahmani's book—at least I was not able to find it. Yet this seems to be such an essential operation...

Just deactivate the Cycle mode: Click on the "Cycle" icon in the control bar.

In the left box, (the region inspector) untick "Loop". Next time it should stay unticked. Maybe not for a different track though - but by default is is off.
I wonder which of these two (very different) kinds of looping it was...
Well... Since the question was about recording, I guessed it is related to the Cycle Mode.
