Using Apple Watch 5 if paired to another phone

Hello!

I bought my husband an Apple Watch 5 (with cellular). He currently has an Iphone 6 and I realize we will have to update. In the meantime, however, can he still use the watch to track his distance, daily steps, heart rate, calories, runs, etc if the watch is paired to my Iphone 8? Thank you! :)
