I've set up Guided Access on my iPhone 5, but when I turn on Time Limit under Options I only have an option to set a 1 minute time limit and I have no idea how to set it for a different amount of time.... like 30 minutes? Please help me, does anyone know how to do this? Thank you very much :-)

I am especially grateful for your help right now, because it appears the normal Apple support people are probably busy with COVID-19-related issues and Apple Support is temporarily unavailable.
Your GIF was very helpful. I have done many of those steps, but when I get to the setting the time limit part I don't have the option to change it from one minute to more minutes. But at least I know what I am looking for now, and perhaps I am forgetting a step or two... or getting them in the wrong order.
I will try again now... just a minute. I will let you know if it works.....

The problem was:
I had increased the size of my text display (so I could read things on my phone without my glasses ;-)....so I got to the "Options" then "Time Limit" toggle switch but I could not see the the dial below the toggle switch because the text size was too big. Therefore, that part with the dial to change the time limit was effectively "below" my screen. So I changed the font of my text display to a smaller size and I could see the dial just fine!
I would have never even known to look for the dial below the toggle if not for your helpful GIF.
