I want to keep my MacbookPro 13 in my device list but I don't want my
desktop to be shared. My daughter is using this laptop and I don't want
to share. Is it possible to disconnect but keep it in my devices list?

Presumably you are the administrator on the Mac. If so, then you need to create a standard user account on the Mac for your daughter. See Set up users, guests, and groups on Mac https://support.apple.com/guide/mac-help/set-up-other-users-on-your-mac-mtusr001/mac.
