Is there a way to set up automatic pause and resume for outdoor workouts on Apple watch?

On posts from January 2019, there are directions to set up automatic pause and resume on Apple watch, but the items in the drop down no longer appear as on the post. Can it be done in some other way. When I walk outdoors, but particularly when I'm hiking, I don't want my watch bothering me when I'm paused waiting for others to move along a narrow ledge, etc. If I don't respond to the watch when it asks if I want to pause my workout, it ends the workout.

Does anyone have a work around for this?
