How do I get rid of the Highlights on my document in Pages for Mac?
There are proper highlights when you set the background color of selected text using the Advanced Options [⚙︎⌄] : Text Background — or Apple's misuse of the term as Highlight from the Insert menu.
If the latter case, a sub-toolbar appears just above the document showing a count of Insert menu applied Highlights:
The words tired and twice are Insert menu Highlights. If you click the left most icon in that sub-toolbar, it will open a panel showing the Highlights (and Comments). You can hide these Highlights/Comments by selecting the View Options at the top of this new panel, and choosing Hide Comments — or you can individually click the Delete word on the Highlight/Comment to remove them.
The word Alice is a proper highlight applied as a text background color.
