removing personal data iPhone 6S removes also personal data iPhone 11

Hi, I have a new iPhone and want to give my old iPhone to someone else. Now I want to remove personal data from my old iPhone. I did unlink the old device from AppleID + iCloud, however, still when I delete data from my old phone also data on my new phone is deleted.

Any ideas how to fix this?

You don't remove data from the 6S, you erase it. This will not affect your other phone.
