Starting in 2020, birthdays and holidays have started to disappear from my calendar. If I go back to 2019 they are there but not in 2020. Then in 2021, more start disappearing.

Did you have a chance to check to see if the birthday calendar was enabled at iCloud.com? Here are the steps again: Show the Birthdays calendar on iCloud.com.
Also, on your iPhone, check under Settings > Passwords & Accounts to see which accounts are syncing to your calendar. Please reply with whether or not you're using Calendar with iCloud.
Finally, take a look at the information here: If your iCloud Contacts, Calendars, or Reminders won’t sync.

When a birthday is added to a contact on your iPhone, the birthday will then appear in your calendar. Check to see that birthdays are still listed for your contacts. Also, check out the information here: Show the Birthdays calendar on iCloud.com/

On your iPhone, navigate to Settings > your name > iCloud. Check to see if Contacts is enabled there. If Contacts is not enabled, please tap the button to turn on Contacts. Then, wait a few seconds and check to see if you're able to view birthdays again in Calendar.

To further address the issue with holidays, you mentioned that the holiday calendar is selected. Try deselecting it, waiting a few minutes, refresh your calendar, then select it again. Here's the information again, if you wanted to take a look: About holiday calendars on iOS and macOS.

Thanks but none of those suggestions helped. The holiday calendar is checked and on my calendar for example Palm Sunday shows up but Good Friday and Easter doesn’t in 2020 but they do in 2019.
As for the birthdays they are still in the contacts and in 2019 they are all there but in 2020 they start disappearing with more disappearing in 2021.
It has been 5 days and I’m still missing birthday and holidays. In 2019 for April 25th, I have 3 birthdays. In 2020 before syncing contacts I had no birthdays on that day. After syncing contacts I got one birthday to show up.
I don’t really use iCloud, but it looks like my calendars are being saved to it, not sure why that would affect it pulling birthday from my contacts.
That helped a little, I got a couple Birthdays back but not all and in 2021 I’m still losing birthdays I have in 2020. Also still don’t have all US holidays either.
