Does iPhone pro max Hong Kong version support e sim card or not ?! & How?!
No software update can make it available. Its a hardware embedded sim. The Hong Kong models do not have that hardware in them.

No. The iPhone 11 Pro Max sold in Hong Kong supports 2 physical sim cards. It does not support the eSim.

Not on that model. It is not possible.
Do you think they will have an update to make it able to use esim card?!
No, the version for Hong Kong version will have to physical SIM slots.
