On iPhone, I can zoom with pinch on the Books app.
Would you tell me how to zoom in and out on Mac?

If by "zoom" you mean to increase/decrease the text size use the "AA" icon in the Title Bar:

No, I have two iPads, one using iOS 12.4.5, and one using iPadOS 13.4.1, and both of them use the same text zoom as my computer. There is no "pinch" zoom option available on either one.

The EPUB file I am opening is fixed-layout.
I think it's the reason why the Books app does not support the font function.
Can I expect the fixed-layout EPUB to be zoomed by pinch on iPad like on iPhone?
