Apple Watch on prepaid
My daughter is wanting an Apple Watch for her birthday, I however don’t want to add another line(we already have 10 devices) so my question is could I do a prepaid sim for a watch for her and it still pair with her phone?

The Cellular Apple Watch shares the iPhone's phone number. This requires the iPhone cellular carrier to support the Apple Watch. The iPhone carrier charges a monthly fee for this service. In the U.S. the fee is $10 per month added to your iPhone bill.
Some prepaid carriers are NVMO operations (they lease bandwidth from other carriers and they are limited in what they can do based on the contract they signed). Other prepaid carriers are subsidiaries of a major carrier, and the major carrier wants you to sign up for a full service contract, and thus does not offer support for the Apple Watch via their subsidiaries.

The GPS only Apple Watch can do Everything the cellular model can do as long as your iPhone is nearby, where nearby is somewhere in the same 3-4 bedroom home (assuming typical wood frame construction). And of course when it is with you as you leave the house.
