Can’t pair

So I have a series 3 watch that has been sitting in a draw for about three years now, I bought the new Iphone 11 and I reset the watch to the factory default and now I’m trying to pair it to my phone and it just not happening. At first they established a connection and then it tells me the update is required and I click on it then the connection fails. I did all the rebooting now what do I do ?

Try this;

Press and hold both the side button and Digital Crown for about 10 seconds, then release both buttons when you see the Apple logo.Wait a few seconds, then hold down just the side button for about 20 seconds until the “erase all settings” prompt shows up on the screen, then tap on it, then tap on the green check button.
