Question is in the title. The dot colour for each user in my shared Note is the same. So currently all the text is the same colour, regardless of who edited what. How do I set it so one of the users has a different dot colour?

Not a different color for text, but for highlighting, so when highlight all changes is turned on, you can differentiate between users. This is how all but one of my shared notes is working, and would seem to be the correct functionality. So it seems if it’s not possible, then it’s a bug? Please advise.

I understand that you’d like to have different users of the same note have a different color text, and I'm happy to help. This isn't currently possible, you can let Apple know that you'd like this feature to be available in the future:
