iMessage deleting one post

When you get into the Messages app then you will see a list of names that you text message with. Locate the one that you want to delete (entirely) and then touch and SWIPE LEFT. Choose DELETE which will appear on the right.

Are you saying that you cannot SWIPE LEFT on just one person's name?

You can add that person in your CONTACTS app. That will keep the person's name and contact information intact.

Looks like you just want to delete some selected messages from this person. If that is the case then you are right. You can select the messages one at a time and delete them as needed.
