Backing up my iPhone 8
If I delete past back ups from my iPhone will it delete a the data on my phone

If you delete a backup (iCloud or iTunes) nothing happens on your iPhone.
If you delete data from iCloud which is synced then the same is deleted from Phone too.
iCloud backup doesn’t include information already synced & stored in iCloud, like Contacts, Calendars, Bookmarks, Mail, Notes, Voice Memos, shared photos, iCloud Photos*, Health data, call history, and files you store in iCloud Drive.
*-If you had turned on iCloud Photos, your content is automatically stored in iCloud.
