Check to see whether DO NOT DISTURB while driving is set to be activated Manually and not Automatic.

Open Settings ➔ Do Not Disturb ➔ Under Do Not Disturb while driving ➔ Activate ➔ Manually.

You probably have it set to Automatic or When connected to bluetooth and when this condition is met then your callers are getting those responses.
