Apple Watch GPS

I was looking to get an iWatch series 5 in stainless steel gold, however there is not option for just GPS. Is it possible to only do GPS not pay monthly for the celluar?

Sure. Just don't activate the cellular option. See the "Turn cellular off or on" section in:
