I would like someone to explain to me where the charges are coming from on my apple account.

Apple Pay and charges to your Apple ID payment method (for iTunes, App Store, etc) are two different things. If you mean charges to your payment method, the following should help: If you see apple.com/bill, itunes.com/bill, or an unfamiliar charge on your statement - Apple Support
