1 Can't add new text to a text box.

2 Save As function is greyed out in Preferences.

If you have filled the text box you will see a + symbol on its bottom margin. Expand the window downwards, and double-click behind your last text entry to continue adding text.
There is no Save as function in Pages Preferences. With the option key pressed, Save As… replaces Duplicate on the File menu.

Consider the Pages Support Site, including appropriate user guides.
