Retrieve Deleted Text Messages

When you back up your iPhone using your computer, a single file of all your content is created and stored. You cannot extract individual pieces of data from this, but you can restore the entirety of the backup to your device to get your missing messages back: Restore your iPhone, iPad, or iPod touch from a backup - Apple Support.

Restoring a backup replaces everything currently on your iPhone with only the information that was on it at the time the backup was made. To avoid losing newer content, I recommend creating an updated backup before restoring the old one: How to back up your iPhone, iPad, and iPod touch - Apple Support.
