How can I stop Auto Sync in Finder with new Iphone?

Running Catalina 10.15.4

I just bought a new Iphone and at my first attempt to Sync by plugging into my Mac, the Finder window has All Photos being backed up along with my whole music library, and I'm unable to stop it.

I cannot turn off the Auto Sync when I connect the phone.

As I watch the Progress Bar try to sync 15000 photos, I just end up pulling the cord to stop it.

I've read many other post about the same issue.

It did not happen on my old phone last week, so I'm thinking something on this new SE is making it happen.

Any Ideas?

That would work,
but as soon as I plug in my phone, Finder shows my phone Syncing with the choices of: Automatically Sync when Iphone is connected and the All Photos checked.
I cannot Stop the process in any way other than just unplugging the phone.
Any other suggestions?
I need a way to adjust the setting in Finder before I plug the phone in.

When connected, from the Finder interface you have an option:

and form the Photo app

As soon as the Iphone is plugged in, Finder starts with a Sync.

All Photos is selected to Sync, I don't know why it has this selection because I have never done this before.

Also, Automatically Sync is selected also.

I do not know how to stop this Sync.

I can change the selection of both All Photos and Auto Sync but it does not stop the process of Finder Syncing when the phone was plugged in. I then unplug the phone and try again. My new settings for All Photos and Auto Sync have retuned to where they were before.
