So I would like to buy the apple watch series 5. I think GPS would be enough for me as I almost always have my phone nearby. I'm wondering if I,at a later date decided I wanted cellular, can that be added to my watch?

In addition to what fieryjack said, you could buy the GPS+cellular version and simply not activate the cellular capability (to save the additional monthly fee) until you are ready. Also see the reply to:

No that isn't possible,you have to buy the cellular version of the watch that has an Esim built in if you want cellular,it;s not something that you can add on later.
