If I understand correctly, your Move ring is closing, but the goal randomly adjusts and it appears as if you haven’t closed your rings after the fact. I’ve been working hard to close all of my rings every day, so I can see why this would be a concern for you.
First, let me make sure I’m aware of the devices you’re working with. Your profile mentions an Apple Watch Series 2 running watchOS 5. Is this correct? To which iPhone and iOS version is it paired? I ask because we may need to look at updating first. This is usually the best defense against issues like the one you’re experiencing. Before we update, I’d like to learn more. Is the Move goal adjusting every day? For example, if it’s set at 450 calories on Wednesday morning, does the goal adjust to 500 calories on Thursday, causing your ring to pull back? If it only happens on one day of the week, which day does it occur?
If you haven’t already, try restarting both your iPhone and your Apple Watch to see if it readjusts or continues to automatically adjust. If it does continue, unpair your Apple Watch and pair it again. (Note that pairing your Apple Watch will force it to update the watchOS software. If your iPhone is on iOS 13, it will update to watchOS 6 when you attempt to pair it again.)
