I’ve had a similar issue. And there is no way to forget the connection as there is no blue “i” next to the connected device. In fact i had up to 10 mystery “iphone” connections in my connected bluetooth list with several more listed in the discovered list below. It was annoying and concerning to have unknown devices connected to my phone. It was also interrupting my bluetooth headphones as the connections were constantly connecting and reconnecting.
The only solution i found was to open the control centre and turn the bluetooth Icon grey so it wouldn’t accept new connections. It’s a pity that this solution will reset each day because Apple thinks it necessary that my bluetooth (and wifi) system needs to be on everyday.

Open Settings>Bluetooth then tap the "i" in blue circle on the right side, tap "forget this device, then restart your iPhone.

Go to Settings > Bluetooth > Off
Do the same with WiFi.
This doesn’t work. As soon as i turn bluetooth back on the unknown connections reappear.
Apologies - the solution i thought worked as above also doesn’t work. Shame.
