Can I undue the upgrade that I clicked on in my iPhone X's Reminders app recently as it has messed up my Reminders/Tasks in my Microsoft Outlook on my PC?

No, you can’t go back to a previous version as the new database is not reversible. But if you describe the problem there is probably a solution for it.
