With the latest version of Pages and Numbers, there is an option to create a new blank document that is black. Is there a way to switch it to regular white after the document is created? Also, can a regular white document be convert to black? Is there an easy way to convert between light mode and dark mode for each document?

The same Page Layout control that enables you to set any color document background, can be set to No Fill and return to the traditional white document page — during document work, or after saving the document and reopening it. The Background controls in the side panel are the only way to change the document background color, as there are no preferences, menu items, or toolbar buttons for this purpose.
If you set the document color in Page Layout mode, and for some reason, decide to convert back to Word Processing mode, the previously set page color remains. There are no background color controls in word processing mode to undo coloration.
