accidently removed my apple watch from my iCloud .

Hi, I accidentally removed my Apple Watch from my iCloud, and I have no access to the phone that was paired with it.(as it has been sold and Apple ID has been changed).

how can I sing out from my Apple ID from my watch Or restore (add) my apple watch to my iCloud again?

If the watch has been removed from icloud then the activation lock is off and you can set it up pair with another phone;

Set up and pair Apple Watch with iPhone - Apple Support

On a computer, go to iCloud.com and sign in with your Apple ID.

Go to Find Iphone.

Select All Devices, then click your Apple Watch.

Click Erase Apple Watch.

Select Next until the device is erased.

Click the remove button next to your Apple Watch.
