Hidden apps on iPhone XS
where would someone hide apps, he has it set to not show the most recent numbers?

There is no way to hide apps on iOS. If you can’t see it on a home screen, or in a folder, and search can’t find it. Then its simply not installed. It can of course be downloaded and then removed after the fact however.
Not entirely sure what the picture is supposed to show.
